Freeze Drying vs. Conventional Drying: What's the Difference?

Anyone buying dried fruit will quickly come across two different production methods: classic drying and freeze-drying. Both have their own advantages – but what exactly distinguishes them?

 

In conventional drying, moisture is slowly removed from the fruit using warm air. This concentrates the aroma and natural sweetness, and the fruit becomes soft to slightly chewy in consistency. Classically dried bananas, mangoes, or papayas are excellent as a sweet snack or baking ingredient.

 

Freeze-drying works differently: the fruits are first flash-frozen, then the water is removed under vacuum without them ever thawing. This preserves the color, shape, and a large proportion of the vitamins almost completely. The result is a particularly light, crispy snack with an intense, almost concentrated fruit flavor.
